- 2 cold cooked sausages - sliced into coins
- 2 large eggs
- Whisked 4 cherry tomatoes
- Cut in half 10 tiny cubes of cheddar
- 1 tsp of butter
How to make...
Preheat your grill to high heat
Pop you’re a mini frittata pan on the hob (medium heat) with a tsp of butter in it
Add in the cherry tomatoes and cook for a couple of minutes until they start to soften
Pour in the egg and bubble away for a couple of minutes until the bottom and sides set
Add in the sliced sausage coins and then dot over the cubes of cheese
Place under the grill until the cheese bubbles and the egg is completely set!
Remember this recipe can be a fun fridge foraging exercise for the little ones as the egg and sausage also taste great with diced red peppers, sliced mushrooms, diced shallot or spring onion, any little cubes of cheese, bacon lardons etc
