  • 1 pack Good Little Company Great Pork Sausages
  • 1 cup Plain Flour
  • 1 cup Eggs
  • 1 cup Full fat milk
  • Maldon sea salt
  • Cracked black pepper
  • 1 bunch flat leaf parsley
  • 2 tblspn good quality wholegrain mustard
  • 2 tblspn onion jam (shop bought)
  • 15 grams’ gravy granules
  • Boiling water
  • British or Irish Rapeseed Oil

How to make...

For the Yorkie Batter

Mix in a food processor the equal cups of milk, flour & eggs, mustard, parsley with a good pinch of pepper & salt allow to stand.

For the Rest

  • On a medium heat fry the sausages in a little rapeseed, we are only getting colour
  • Add your Yorkie mix – only half way up the side of the sausages
  • Place in a pre-heated 190°c convection oven for 20 minutes or until its very big and golden brown
  • Boil your kettle – in a jug add your granules – add your water – not too much & stir through the onion jam
  • Serve in the pan & drizzle over your onion jus – delicious
